Concessions Team Responsibilities

Concessions Lead

Open the rink (games, rental ice, open skate)

  1. Unlock front door (push in paddle, turn lock to hold)
  2. Turn on lights (in chiller room, everything is marked, pay close attention and only switch the top breakers for lights)
  3. Make sure locker rooms are Unlocked or Locked (during open skating, lockers rooms, equipment room and offices need to be locked)
  4. Open Kitchen and Start getting things started (see document below for opening)

Supervise concession workers in kitchen (just help guide them and answer their questions)

Manage the cash drawer

  1. Load Startup Money
  2. Make Change
  3. Close and count down cash drawer at the end of day
  4. Report any money issues to treasurer

Maintain rink cleanliness (garbage, bathrooms, arena (ask other SHL members for help if busy))

Help cover any open shifts when needed

Report low stock on items in kitchen to concessions manager

Close Rink at the end of day

  1. Verify kitchen was cleaned up
  2. Make sure Deep Fryer/Grill are off
  3. Make sure food is all put away
  4. Make sure all money is secured, safes are locked
  5. Lock all Doors (always check locker room hallway rear door and rear lobby doors)
  6. Turn off Lights

If you need to leave the kitchen/lobby area for any reason (watching game, run to store, ect..) please let the concessions workers know and leave them a contact number. Please try not to leave when it's busy or during Open Skate.

Concessions Worker

Follow all kitchen safety & cleanliness rules!

  1. Show up as scheduled - find replacement if can't make scheduled shift (You will be charged if you miss a shift)
  2. Restock/Refill during slow periods (candy, soda, condiments)
  3. Keep kitchen clean - do no leave a mess for the next shift.
    1. Wipe counters throughout shift
    2. Wash dishes at end of shift
    3. Sweep lobby/kitchen as needed.
    4. Check bathrooms periodically during shift.
  4. Clean before shift ends
    1. Grill top
    2. Change kitchen garbage
    3. Wash all dishes.

Final End of the Day Shift (always check calendar to know)

  1. Lobby cleaning -
    1. Spot clean lobby
    2. Wipe tables
    3. Place chairs neatly.
    4. Sweep lobby if needed
    5. Change garbage
  2. Kitchen cleaning -
    1. Clean Hot Dog Roller
    2. Clean out Popcorn Maker
    3. Wash all dishes (including fryer baskets, coffee pots)
    4. Wipe all counters
    5. Make sure coffee machine is off
    6. Turn off fryer/grill
    7. Turn off Vent Hood (switch on back of hood)

Sundays: (final shift of the day)

  1. Remove cheese from warmer - place un-used in refrigerator, unplug nacho machine.
  2. Turn slushie machine to "Clean" drain old soda into a bucket and dump, rinse machine repeatedly with hot water until clean. Shut off machine when finished.
  3. Make sure all food is put away
  4. Wash all dishes
  5. Turn off all lights when done - leave building with other concession workers.
  6. Check in with Concessions Lead before leaving
  7. Record your hours
