Concessions Team Responsiblities

  1. Responsible for open/close of rink (games, rental ice, open skate)
  2. Supervise concession workers, student workers, asssist as needed.
  3. Manage rink finances during shift covering (document open skate activity.)
  4. Maintain rink cleanliness (garbages, bathrooms, arena)
  5. Work with Concession scheduler to cover or cancel shifts as needed.
    • Seek volunteers when games added (post on bulletin board.)
    • Cancel workers when games are cancelled.
  6. Make sure kitchen supplied as needed.
    • Hot Chocolate filled
    • Nacho cheese filled on a weekend.
    • Soda Stocked.
  7. Verify Rink is clean at end of day/shift
  8. Meet monthly with entire concession team
    • Discuss monthly rink coverage
    • Discuss any changes
  9. Start up/Shut down
    • Turn on fryer
    • Start Slushie maker
  10. Watch lobby room temperature and adjust as needed.

Concessions Workers Responsiblities

  1. Show up as scheduled - find replacement if can't make scheduled shift
  2. Work in Kitchen area or skate station (open skate) - rotate positions as needed.
  3. Keep kitchen clean - do no leave for next shift.
    • Wipe counters throughout shift
    • Wash dishes at end of shift
    • Sweep lobby/kitchen as needed.
    • Check bathrooms periodically during shift.
  4. Follow all kitchen safety & cleanliness rules
  5. Clean before shift ends
    • Grill top
    • Change garbages (kitchen / lobby)
    • Wash all dishes.
  6. Final shift of day:
    • Spot clean lobby
    • Wipe tables
    • Place chairs neatly.
    • Sweep lobby
    • Change garbage cans
  7. Kitchen cleaning - Final Daily shift
    • Wash all dishes (including fryer baskets, coffee pots, steam table if used.)
    • Wipe all counters
    • Turn off fryer
    • Unplug all but nacho cheese (unless Sunday)
    • Sunday: Remove cheese - place un-used in refrigerator, unplug nacho machine.
    • Turn off slushie machine (unless Sunday)
    • Sunday: Empty all soda back into empty soda bottles - put back in cooler, clean out with warm water and rinse thoroughly 3 times.
  8. Turn off all lights when done - leave building with other concession workers.
